Default getting mouthfeel on with Flying dog Gonzo

Ok so i want to brew an imperial porter similar to Gonzo. Which is a monster of a beer if i do say so myself. I want that nice thick mouthfeel and that great aroma. Here is my idea for a 5 gal.

15# pale
1# flaked barley
1# crystal 120
1# carafa
US-5

I'm thinking of mashing at 155 to get the most i can out of this. I want a thick chocolaty feel to it. I'm also going to cold steep a few oz of course ground coffee beans in vodka. Gonzo is 7.8%. This one is looking at 8%. Will this do it? what ferm temp would be ideal? Thank you so much for the help!!

Seems like you are close with the grain bill; Flying Dog lists 120L, Black Malt and Chocolate as the speciality grains. I think an English pale malt like Maris Otter would be perfect as a base malt.

Mashing 156-8° would most certainly give you a big, almost viscous body.

Funny, I was just at Flying Dog on Monday enjoying some Gonzo!

i love flying dog! The aroma in gonzo is amazing. I think it's the yeast but i'm not sure. Do you think US-5 will give me what i want?
