Default Game day IPA

This is going to be the first AG batch. How should I sparge(batch or fly) and what are the temps I should hit for how long? I’m shooting for five gallons final in the fermentor and am using a 10 gallon cooler setup. I’ve got a 6.75 gallon pot to use for the boil. Heres the grains: 7-lbs American 2 row pale, 2-lb crystal 40l, 1-lb cara pils, 1-lb American wheat. For the boil I’m cooking some Chinooks for 60min@1 oz, cascades for 30@1 oz, and crystal for 15min@1oz. I was planning on using s04 for yeast b/c that’s all I used in the past for IPA’s. Should I switch it up?

Are you after a more malty British style IPA or a dryer West Coast IPA? I personally like West Coast IPA's, here's what I do;

Mash @ 149 for 75 min.
mashout 168 for 15 min.
sparge for 1 hr or 1 pint per minute.
90 min. boil
60 min. hop add
30 min. hop add
10 min. hop add

Dry hop after primary ferm.

For yeast I love WLP001 - Cal Ale
1 vile in a 2000ml starter 3 days prior to brewday

Obviously you should batch sparge..... With only a 6.75 gal. pot you won't be able to collect a lot of wort, so plan on a lower efficiency. When I used one that size, I ran about 65%. For an IPA, I usually mash at about 152.

so If i can hold a temp between 152 and 149 I should be good., Thanks I'll try it for about 75 min.
