Could someone please direct me to a good reference for projecting O. G. of the wort from ingredients, and thereby calculating efficiency?

very
rough rule of thumb I use is that most malts give around 1036 at 1 pound per gallon of wort.
therefore if you have 5lbs of malt in 5g of wort it'll be 1036.
example:
7lbs of malt at 1036 you run off 8 gallon.
7lbs x 10(

)= 252 points
252 / 8 gallon = 31.5
So your wort will be around 1031.5 at 100% efficiency.
