Palmer talks about DMS as noted above... it needs to be boiled off.

If you don't have a big enough pot then as it is VIGORISLY BOILING add a cup of water every once in a while.

OR

After the word has chilled and add water prior to aerating. I do this straight from the tap but we have good water… you could add boiled or distilled water… it should not matter.

Timely.

Last night, I put 6.25 gallons of tap water into my new 10 gallon brew pot, and even with it straddling two burners, I cannot maintain anything more than a simmer without the lid being on. Looks like a propane floor burner is in my future.

And the equipment list expands... Just remember forgiveness is easier than permission from SWMBO...

My favorite statement, "It was only like $50 hunny..." Though it can backfire when her coach purse also become "Like $50"...She knows how to play the game as well...

I just do not spend money on anything else. Literally, I own almost nothing. That way I can justify this stuff. And when it gets bad just make her a tasty pale ale or whatever she really likes.

Amen to that inhousebrewer! My wife also likes to brew with me so we'll do a Raspberry Brown, or Witbier for her when she wants to... I'm more of an IPA or Altbier type... thats why there are 2 kegs in the kegerator I guess...
Questions come up when new equipment comes around..
Wife:"Where did that come from?"
Me:"it was only $50 hunny. Hey, this new keg has conditioned... lets have a beer!"

...Proceed with brewing... SWEET!

I just remind her every time she gets her nails done or her hair done, that's another piece of brewing equipment or batch of beer for me....works rather well most of the time.
