I presently have an American Pale Wheat Ale in my primary which I plan to bottle this Friday. My idea was to re-use the yeast (WLP300) and brew a Dunkelweizen, since the yeast should compliment the style well.
I want to try to wash the yeast using Bernie Brewer's
yeast washing guide, but since I will be brewing that day, when I get to the point of separating it out into four jars, can I just pitch one of the jars at that point and then save the other three or do I need to go through the separating process in the fridge prior to pitching? When I check
Mr. Malty's Yeast Pitching calculator with the sliders min/maxed it says I would need to pitch a little more than 1 cup of slurry, so conceivable one of those pint jars would be enough.

Any opinions on the final recipe would be much appreciated. It's only my second partial mash (usign Deathbrewer's
Easy Stove Top Partial Mash Method), and I am getting quite a bit more fermentable sugars from the grain than I did on my last PM, where I used 5 lbs DME to 3 lbs mashed grain. Is it wise for me to use a 3:4.5 ratio of DME:Grain? I feel fairly confident in my mashing technique and felt everything went great with my last PM.
