Maris Otter has more of a biscuit flavor. Like others said, for a light beer like a Lager it may not be the way to go but I prefer it in IPA's and even some Blondes although you have to watch and make sure it doesn't get to dark. It's good for a fuller malt flavor.

Dont have it in front of me so Im not 100% it is in this one but check out Ray Daniels book "Designing Great Beers". Im pretty sure there is a whole chapter dedicated to just different grains and their characteristics.
