Does anyone else work with buckwheat? I've got a few references and one of my colleagues was a beer consultant for a while so he offers good tips but never worked with gluten free malts.

I think a couple of guys on here have used buckwheat in a brew, but I don't think anyone has worked with it a tremendous amount.

I used some unmalted buckwheat with some rye in a Cassis lambic. Was going to be a Roggen-Heffe, but didn't get the yeast in time.
