this jumped out at me. at what temperature are you drinking your beer?

ice cold beer ROBS YOU OF FLAVOR AND AROMA. many people have fallen prey to this.

serve it at 44F or warmer, i bet it suddenly has flavor. Hydrometer samples are usually over 60F, and blast their flavor and bouquet at you.

Biermuncher's centennial blonde is a very good, easy, light crisp beer. It is also done quickly and perfect for the hot Texas summer days. Highly recommended.

I actually saw three or four things that jumped out at me.

I try to get a hoppier flavor from two things. High attenuation leading to a low FG and also by adding a solid amount of bitterness in the sixty minute addition. At least 50% on the IBU's.

Maltier means that I will mash thicker, around 1.25qt/lb or even down to 1.1qt/lb. I also will mash a little higher. Lastly I will use a less attenuative yeast (english is a good one, I think you used a British yeast, so you are good there).

Last is to change one thing at a time. First do a thicker mash, then do a higher temp, then once you have the malt profile right, work on the hops. This is part of the reason that making beer is fun and it is good to see that you are doing smaller batches more often.
