Default Too much carbonation

Hi all-

I've got a question about carbonation:

I brewed a Scottish Ale a few weeks back, and for bottling used the 5 oz. of priming sugar included in the kit. When I cracked one open after letting it sit for the appropriate amount of time (2 weeks), I found it to be a little too bubbly for my liking. Now, I can't tell if it's because of the relatively low ABV (3.5ish%), or if it's something else. Could this be the result of too much priming sugar? I'm assuming the 5 oz. for a full 5 gallons of product (thus 1 oz./gal.), right? If I end up with less than 5 full gal., should I adjust the sugar accordingly?

The volume of CO2 is determined by several factors
1. Stable Final Gravity
2. Highest temperature during fermentation
3. Amount and type of priming sugar
