If you keg up a small 2 1/2 -3 gallon keg in a kegerator and later on you want to take it out and bring it to a BBQ. and use a portable charging system like co2 cartridges would this work?

I do it all the time.

Use whatever force carbing method you want. Put the keg in a bucket of ice. Attach the portable CO2 setup and picnic tap. Let the keg sit for about 30 min to let it settle down.
