kegging question

Ok, so for the record, I'm brewing mostly light and medium APA's. simple, and they taste good. i have been brewing 5 gallon batches, but got a bigger kettle, so now i'm bewing 10 gallon.
Here is my procedure, I ferment for 14 days, rack to a corney, cold crash for 2 days in my converted chest freezer, filter, then carb at 38dg for 14 days or so in the chest freezer. By that time i usually have an empty in my kegerator/mini fidge. my goal was to have 2 in the kegerator, and 2 carbing for backup.
now my problem (sort of). brewing 10 gallons at a time, i have too much beer, i dont drink it fast enough in the winter.
So question is, after i carb for a couple of weeks, can i remove the corney from the keezer, unhook the co2 and store at room tempeture until I'm ready for it, without the beer spoiling or decarbing ??
