I think the best advice to any newbie brewer is to just be patient!
This was brought home to me when I made a batch of Bavarian lager. After 6 weeks in the bottle it still tasted harsh and smelt like bad drains. So I stored some bottles in a cardboard box and put them aside.
I tried one last night, after 11 weeks in the bottle. Guess what? It's now a really nice, smooth drink.
In hindsight, I think I made the brew a bit too strong, so it was straying into bock territory. It just needed some time to mellow.
