Default Fermentation in the Secondary/Can I Still Bottle?

Tomorrow makes the 10th day that my APA has been in the Secondary. I Dry Hopped her 10 days ago tomorrow. What worries me is that I still have some Air Lock Activity. About every 2:30-3:00 minutes I get a blip from the Air Lock. I really don't want to leave the Beer with Dry Hops for more then 10 Days. But I am worried about exploding bottles. What do you think. Am I safe to bottle tomorrow?

You should be fine.

Always use a hydrometer to answer your own question. Once the gravity is stable for three days...the beer is done.

Some residual CO2 production is normal.

How many days in the primary? If you have a total of 20+/- days in fermentation vessels, you're fine to bottle. Don't let a $3.00 airlock dictate your beers progress.

Now, if you brewed up a double IPA at 10.5%, that's a different story.

The beer is an APA. Nothing Big about it. After 14 years oh Home Brewing you'd think I'd start taking Hydro samples of my beers by now...
