I'm trying to get away from my plastic pails and use all glass and stainless steel. What's the best way to bottle w/o a plastic pail w/ a spigot?

Just about everyone still uses a bottling bucket unless you are kegging, even those who only use glass fermenters. You could bottle with an auto-siphon attached to a bottle filler, but it would likely be a real PITA. Keep the bucket!
