Default Another force carbing question

I understand how to use the carbing charts, mostly. I'm still left with one question. I have two tanks and two regulators. My keezer is small and I want to force carb kegs in the basement, say at 62 degrees. To get a volume of 2.5, I need roughly 25psi CO2. At 35 degrees I need roughly 10psi CO2. I understand the reason for different pressures at different temps. How do I go about carbing at 62 degrees and then put beer in keezer two weeks later at 35 degrees. I'm thinking that I should just bleed off the head pressure, hook it up, and than drink

That will work, but wait until the keg has chilled before venting and connecting.

If i chill it before I vent it, won't the CO2 in the head space get absorbed by the beer as it chills, resulting in a higher than desired carbonation?
