Default Yet one more holiday cider question

This will be my third batch of apfelwine/ cider:

0.5 gal of maple syrup grade B
4.5 gal apple juice
1 can pomegranate/ blueberry juice concentrate
(I also have some tart cherry juice concentrate, can I add this?)

My question is how much honey or sugar should I add?
How can I spice this?

Personally, I'd leave out the pom/blueberry concentrate, and not add any extra honey/sugar.You're already looking at an OG of 1.080 without any extra honey/sugar and even without the concentrate. If you're hoping to drink this by the holidays, I doubt it will be very good, as it will be quite green and rocket-fuel tasting, especally at >10% abv and only 3 months aging. If you're planning on having it next Christmas time, then you'll be fine, although I'd still leave out the concentrate, it's better to have less ingrediants the first time, so that if you think it needs something you can add it next batch around, don't have too many variables.

Hmmm...

This is jma99's third batch, not his first. Obviously he is craving a way to jazz that straight AW taste UP a tad.

I wouldn't do anything more to it without taking a gravity sample first.

I personally have no idea what the half-gallon of maple syrup does sugar-wise to your must.

If Freezeblade has nailed it, and you're at 1.80 or so, that would be plenty of ABV for me. But, you surely can keep on tinkering with it if you prefer.

Flavor-wise, you've already got a maple twist going on with this batch. Those other juice additions will definately make things interesting, but as suggested, when adding other flavors, I'd go with one at a time just to avoid confusion over which one causes what end result...whether good or bad!

If possible, split this batch up between several airlocked gallon jugs, and add a different flavor of juice to each one.

Remember, you're the chef in your kitchen, and the sky's the limit!
