If I bought some unpasturised cider from the grocery store, drank a few glasses, threw an airlock on it and let it go for a month or two, would that make me crazy?

You will be fine. People made cider for eons before they even knew what caused its fermentation.
In fact, I had a batch that accidentally started fermenting on its own...
Awesome, Next time I am at the grocery store I will grab a gallon. Hell, $5 for a gallon of hard cider sounds good to me.
