Default Traditional cider?

Back in the "olden days" what was a traditional cider recipe? and how long was it aged. i can't imagine that they would let it age as long as most people on this site would. Just curious if anyone knows the history.

My understandng of traditional cider is as follows:
1. Press apples in the fall
2. Pour juice into oak barrel.
3. Put barrel in cellar
4. Enjoy cider (or vinigar) next fall.

I could be wrong, though.

Sounds right to me. The only thing I would add is they would have had a bigger barrel for primary then a normal one for ageing, but you don't need ingredients to make cider, just apples and some elbow grease.
Cider was a really important part of farm life and often formed part of the wages for labourers.
