Default Sweet Cream Amber Cider

This is a recipe I have been toying around with. I think I have where I want it.

This is meant to be a sweet cider.

Grain bill for mashing.

3lbs 2 row
1lb vienna
1lb Crystal 120L
1.25lbs carapils/dextrine

Mash grains at 155 for 1 hour and collect 2 gallons.

Boil for 1 hour with 1oz of 1.9AA Fuggles

Cool wort and add to 4 gallons of apple juice and 1 can of apple juice concentrate.
Ferment with nottingham 2 weeks in primary and let it get crystal clear in the secondary.

What do you guys think?

I think you're the king of malted cider!

I personally would use Munich over Vienna, but that's just me.
