Just started , three gal of unfiltered Sun harvest apple juice,
3 lbs of honey boiled with a qt and a half of water , plus
bout a 2 cups of home made yeast nutrient (boiled raisins
and dates) and a half gal starter of washed Wyeast 1056
so I ended up with a little over 4 gals, just took a gravity
an it 1.068 so with 3 lbs of honey and 1152g of sugar in the
juice we should be good to go.I am going to try to catch this
before it gets to dry the first batch ended up being right at
the point of not sweet enough.
Boiling honey and fruit is usually considered a bad idea. Some heat to around 160 F to pasteurize. Others, myself included, don't heat at all (or just enough to dissolve honey). You may not notice any ill effects from boiling, but it is typically associated with altered flavors, cloudiness, and loss of aromatics.
Sorry long day short night last night, didn't boil it, never got above 180
f mostly at or a little below 160 f so i hope no harm no foul , the first batch i just heated an dissolved it in hot 'ish water , this time thought i'd try what I
read somewhere

why o why does this seem to be going so slow ,started feb1 at
1.068, then feb 12 it at 1.022, now at feb 19 it's only at
1.018 ,it's in the secondary and it's losing it's sweetness
I was thinking of adding some strawberrys or other fruit
to get back some sweetness , but was hoping to wait till
it got to 1.010 -1.002 before doing so wondering now if I took it
off the primary/yeast to soon ?
So I took a reading and it was at 1.010 ,I then took a pound of fresh
strawberries that had been chopped and frozen and thawed three times
put them in the food processor and pureed and spooned it in the carboy and gave it a swirl. the plan now is to let it be for three day then cold crash
then bottle ,wait for it to carb then pasteurize in the dishwasher (worked
well the first time)
What kind of sugar should i add ?, i have corn sugar , honey , cane ?
was thinking of 3/4 teaspoons per grolsch bottle ?
