Cuvee rules for cider, I'm surprised more people aren't using it actually. Been making cider awhile with only cuvee, until I found EdWort's Apfelwein recipe. Now have 2 batches going, one motrachet, one cuvee.
It really retains that apple flavor well (cuvee) and ferments clean but not berserk like montrachet.
