5 Gallons fresh pressed.

3lbs or 36oz Of maple syrup

Red Star Montrachet.

Maple without any sugar is a very strange flavor. I'd suggest a small trial batch.

If you cold crashed it at 1.010 or a bit more, the residual sugar would probably keep the maple from tasting funny. A little more trouble, but if you have a fridge with enough room it's not too bad.

swap the montrachet out for wyeast sweet mead yeast 4184. leaves 2-3% residual sugars behind.
