Is 1 packet of montrachet too much yeast for 2 gallons of juice + sugary extras? I have some Mr. Beer kegs back from when I was didn't use big carboys, and they're 2.125 gallons. I figure this would be perfect for experimental batches (mapfelwein, oakfelwein, super hi gravfelwein, hopfelwein). Is a full packet too much? I wouldn't want to handle the yeast too much with measuring out 1/2 and 1/4 packets. Any thoughts?
