Hey guys and gals, just started 3 different 3 gallon ciders based loosely on the Apfelwein recipes.

Should I completely fill up the 3 gallon carboys with liquid?
or leave some headroom for the fermentation and top off later?

I used Safale 04 in 2 batches and the Montrachet in the straight apple one.

I have had some foam overs doing beer but not sure about these ciders/yeasts.

Hoping to start a new Fathers Day Tradition! :rockin:

Welcome to the obsession. Ciders not normally as vigorous as beer but I always leave some headroom for primary. If I primary in carboy I fill to the top shoulder.
 
Obsession is right! I have 4 different batches of beer fermenting and 3 different ciders and now working up some mead recipes to try!

Should I top off the carboys in a few days to minimize the airspace in the carboy?
 
No worry about headspace during primary fermentation. The CO2 given off keeps oxygen away. As long as airlock is in place no oxygen getting in. When you rack to secondary is when you want to eliminate headspace.
