Need Some Help
I made a Hard apple cider 1 week ago the OG was 1.070 I used Red Star Pasteur Champagne (Davis 595) been 3 days nothing from the airlock took a reading 2 days in a row 1.005 What shoud I do no rack it let it sit ??? it like drinking jet fule will it get better in time or should I add something to it :confused:

Nothing you can do but let it age. Even in a year, it's going to be pretty stiff.

You could turn it into an apfelwein, which it pretty much already is. Cold crash it, stabilize it with chemicals, then add some sugar to take some of the bite out of the alcohol, and let it age 6 months with no carbonation.

The absolute best thing you can do with fresh cider if you want it alcoholic and you want it right now, is to heat it up with some mulling spices and fortify it with Tennessee Whiskey. It's simple, it's delicious, and it gets you drunk.
