Well, I spent a ton of time trying to formulate a recipe. I thought I would share the results with you guys since the cider came out mighty fine.
3 Gallons of apple juice ( I used 2 different brands)
1 lb brown sugar
tiny bit of cinnamon
I dissolved the brown sugar in some of the apple juice
Used EC 1118
I transferred to a 2nd after 3 wks and then let it sit for 2 more months.
I then added 2 oz natures red apple flavour extract (natures Flavours) and added Xylitol syrup and powder to taste
Let it sit for two more weeks and then Kegged.
Obviously, I could have used apple juice to sweeten it since I was kegging but really like the extracts from Natures Flavor. I was going back and forth whether I wanted to bottle or keg so headed down the direction that would allow me to do both.
