That sounds delicious. The only thing is that the reason I want to try some cider is for my wife and she has a gluten allergy. This does not seem to be gluten free. Maybe there is a way to make it gluten free?

Revised recipe is on p42. I have a batch fermenting right now.

You do have to be able, using Nottingham, to keep your ferment temps in the low-mid 60's. Nottingham above 68*F (inside the fermenter) gets funky.

How do you think the Brandon's o graff would taste if I substituted a gluten free extract in place of the dme. I am not going to worry about the steeped grains as I believe this would impart very little gluten and I can test it to see what the gluten level is once finished.
