Default I put raisins in this batch!

So, I've added some raisins that I reconstituted in sherry to this next cider. It goes as follows:

3 gallons AJ
1.9 lbs clover honey
2 cups sherry raisins
3/4 tsp Acid Blend
3 tsp Yeast Nutrient
Safale S04

I'll let you guys know how it goes.

P.S. I know because I used honey it's technically a cyser, but whatever.

Update: I decided to bottle today. Gravity reached 1.004 and more or less stopped activity in the air-lock. I primed with 8 oz of AJ concentrate, and plan on cracking open the first bottle sometime in April, though I think it will take a little longer to reach perfection.

Any notes from the sample? How was it overall, and did the raisins add anything noticeable at this point?

Yes, there is a hint of raisin and a little nuttiness, but at this point it was eclipsed by the tartness of the young cider. There are underlying elements clearly visible, but I believe they won't truly be revealed until it has mellowed out a bit.

I have high hopes for this brew, based on the initial tasting...so we shall see.

It should also be noted that I racked after 7 days, and added another cup of raisins to the secondary. Forgot to update earlier.

I always use raisins and find that your instincts are true. Give it a few months and the flavors meld together. In my opinios, raisins work magic. They add lots to dry cider, especially if you can wait a while.

Unfortunately, the last bottle is always the best
