I'm pretty sure it is 1 tablet per gallon, but when I make blueberry wine I just use 3 tablets for 5 gallons until I rack.

I always read between 1 - 2 tablets per gallon. I split the difference and round down- so 7 crushed tablets to a 5 gallon batch for me.
