I made an hard apple cider this weekend. The Og was 1.070 I used the Red Star Pasteur Champagne (Davis 595) Do you guys think it will be ok.
Yes, I think it will be fine. I made JohnnyJumpUp Cider and my OG was like 1.080 finished at less than 1.000. And I used that same yeast.
I made an apfelwein a few months ago with a 1.100 and it finished dry with a standard wine yeast, yours should be fine.
