It seems like you would add the ginger whole.
I have no idea how you'd get all the stuff out of the demijohn- maybe you should make it in a bucket, and then rack (siphon) to the demijohn after a few days.
Normally, I put my apples and things in a big mesh bag in the primary, and then after 5-7 days, I pull the bag out and squeeze it, and then move the wine/cider to the carboy and airlock it.
