Default Getting better and better . . .

So, I made a batch (my first) of pretty simple hard cider (3.5 gallons cider, 1 gallon apple juice, 1 lb brown sugar, 1 pack S-04, apple pie spices) 6 weeks ago or so. Tasted it at bottling 3 weeks ago. Very uninspiring. Dull. Indecipherable spice flavors. Sampled a bottle a week and half ago. Getting more sparkly. But still ... meh. Shared a bottle with the SWMBO last night -- suddenly -- very good! Sparkling. Appley. Pleasing spice. I've gone from "I think I just wasted a bucket of cider and 2 months" to "I need to start another batch!"

I'm working as a pro now, but that doesn't mean I'm not still homebrewing. I'm going to see if I can homebrew at work as a way to develop new recipes.
