If it's pure apple juice, with no preservatives/chemicals you should be just fine. Check out Edwort's Apfelwein.
It's a favorite on this forum, and in my house. I'd suggest making the recipe exactly as given first, then make modifications as desired. Sometimes I spice it, or add unfermentable sugars to sweeten it, but the original is amazing too.

Secondary: Sweet Mead, Dry Mead, Oaked Dry Mead
Bottled: Sunbreak Amber, Irish Coffee Stout, Bavarian Weizen, Bigfoot Barleywine Clone, Imperial Saison, EKG Lite, Dry Mead, Spiced Apfelwein
Kegged: Strawberry Blonde, Ballard Bitter Clone, Southern Cross IPA, Smoked Habenero Porter, My oh Maibock, Maris Otter Mild, Apfelwein x2
