Default Flavor?....

Why is most cider only apple or pear flavored?
Can you not use other fruits like, orange, pineapple, cranberries... Etc?

Tradition & history.

There is no perfect definition but here's what I like to use.

Cider - Made mainly from apples and pears, typically carbonated, may be supplemented with other fruits (raisins, cherries etc) and flavors (cinnamon, brown sugar etc) up to around 10% ABV. Above that point, the additional fementables change to character of the beverage enough that I classify it as something else.

Wine - Made from grapes, mostly still.

Other fruits - 'Fruit wines', these beverages don't have a huge following historically so don't have a distinct name/style like cider which has long enjoyed a tradition and style separate from wine.

Not exactly, using clearly defined terms makes for more efficient communication.

So only pear or apple "booze" can be considered a cider?

In my opinion, yes.

YOU can call anything by any name, but don't be surprised when others don't understand what you're talking about.

Technically if it is mostly pear it would be called Perry rather than cider wouldn't it?

Yes. Traditionally, fermented pear juice is called perry, apples are cider and the fermented juice of other fruits is called wine.
