I just threw a cider together last night. Pretty simple:
4.5 gallons of apple juice (no preservatives)
3 cups table sugar
3 cups Light Malt Extract
Safbrew t-58 (dry)
I plan to ferment it for no less than 6 weeks, than rack to secondary for as long as it takes to clear. (2-3 more weeks)
I suppose I may have to back sweeten it before secondary with some concentrated apple juice.
