Around this time of year, the farmers markets have loads of great apples and awesome honeys. I buy the "seconds" or "non-pretty" apples for around .25 to .50 cents a pound direct from the farmer. This batch is all Fuji apples an it took about 12+ pounds to fill one gallon using a Breville style centrifugal juicer. You can just drop the whole apples right in, core and all. After juicing I leave some headroom in the top of the gallon jug for about 3lbs. Of farmers market (or Costco) honey. Add 25+ rasians or yeast nutrient if you can to help the yeast chew through the honey. Add 1/4 - 1/2 packet of dry Nottingham or US-05 or even WPL 004 or 300. Put an airlock on it and throw it in a closet for over a month. You can bottle straight from the jug or just slap the whole jub in the fridge and pur it off as you need for a still version. Carbs up great too. Like most honey heavy beves, time helps mellow out the boozy punch and makes it more complex.
