Ingredients to go in primary:
5 Gallon of Musselman's apple cider (I got mine at Walmart)
6 lb brown sugar
yeast energizer (optional)
Nottingham ale yeast
Potassium-metabisulfate (add at bottling)
1. Mix cider, sugar, and yeast nutrient together and then add to primary fermentation tank, this usually requires heat.
2.Add yeast once everything is dissolved.
3. When fermentation has slowed to one bubble per minute rack to secondary and add yeast nutrient.
4. At your optimum sweetness level add potassium-metabisulfate and mix well.
*If fermentation stops and the cider is still too sweet add yeast energizer.
5. (Optional) Force carbinate
Usually my fermentation naturally stops at 1.020 due to the APV being too high for the yeast, this gives me the perfect level of sweetness. I then add K-metabisulfate to this due to the high residual sugar post fermentation; it makes me feel much safer when I bottle that it will not over carbonate and make a mess.
