I'm interested in brewing up some cider, but I want to make sure I have the right size fermenters. How much headspace do I need? Will the cider produce krausen like beer? Or can I start with a smaller fermenter to avoid oxidation?
It will depend on the yeast you use. The wine yeast i use does not produce krausen. But i believe beer yeast will.
I used Safale S-04 and had less than 2 inches of head space. 2.75 gallons apple juice in a 3 gallon BB. It was fine. Never a problem.
