Default Champagne Cider

All,

I made this recipe - http://www.homebrewtalk.com/f32/champagne-cider-106522/ - based loosely on Edwort's Recipe. I tried a bottle last night, and it's extremely reminiscient of a dry champagne. Delicious!

Yes I feel like it is very close to a dry white wine. I intend to make some then backsweeten at some point since I and my wife like sweeter ciders.
