Is beersmith useful in creating cider recipes? From what I can tell, it doesnt look like it (at least, not easily), but I could be mistaken.

You have to create a custom ingredient for the apple juice. Measure its OG, and add it as a sugar. You might have to play with the numbers a little until you get it right.

Is there a way to determine Original Gravity based on sugar, or am I going to have to measure it with a hydrometer?

Measure the juice without any additional ingredients with a hydrometer. Most brands differ slightly.

indludes a fruit section that has apples and if you load at 8lbs per gallon the gravity is correct...tested it against an apple juice sample.
