Default Apple wine bitter?

Hey y'all I'm having a bit of trouble with this wine I got going. It has been fermenting for a little over a month and a half. Once it stopped showing signs of fermentation I added potassium sorbate to make sure it was done. It smells good but tastes pretty bitter. Does it need to be aged? If so, how long should I let it age. And would it be okay of I left it in the fridge? Thanks

3-4 months bulk aging in the carboy, 6-months to a year in the bottles.

Sorbate has a distinct flavor that I dislike, so I don't use it for that reason. It's possible that you are tasting the sorbate. If so, that will not age out. Other flavors will mellow with some age, though, like fusel alcohols, tannins, phenols, etc.
