I'm planning a trip to the local fruit farm to buy some juice for my hard cider project.
Does it really matter which apple the juice comes from? It must to some degree...

Tart or cooking apples make the best cider. Granny smiths, Rome Beauty, Baldwin, Jonathan, Braeburn, Jonagold. The problem with sweet eating apples is they are sweet and not much else.

Bang on the money with that one david! 'Hard Cider' apples in the UK are definately 'acidic' types rather than sweeter 'eating' varieties.
Rdracera1, if you can't get a full batch of Tart/Cooking Apples to make it with then do your best to get at least some in there for flavour.
