1/2 Gallon water
2 lb Light brown sugar
1 Pack US-05
Ferm chamber set to 65F

Sounds interesting. Was the 1/2 gallon water used to dissolve the sugar before adding it to the juice?
I just used that water to rinse out the juice bottles. The sugar seemed to dissolve pretty well in the juice when I shook the Carboy.
I think I'll let this ferment out, then maybe age is in a little oak and serve it still.
