I have had a batch going for almost two weeks. Can I leave it in the carboy longer to clear,or will it get too dry? I pitched Nottingham yeast in this one. My last was made with s-05 and I like it. I bottled at two weeks as called for, but it was not clear at all. It is clearing in the bottle, but quite a bit of sludge at the bottom of each bottle. Was just wondering if this is kosher or if it can be left to clear in the carboy.
