Default 15 Gallons of Ed's Apfelwein

Hopefully Ed can agree that this meets his Apfelwein recipe to a close degree. It's 14 gallons of Treetop Apple Cider and 6lbs of Dextrose Corn Sugar. I used 3 packets of Montrachet Yeast which was reconstituted and mixed 1 tbs of yeast energizer in with the must.

The final gravity as around 1.062

I can feel the wonderful headaches already

Is that blue bucket there to contain all the yeast that will blow out of that tiny head space?

it's the bottom half of the carrying basket... most of the demijohns of this size come with them... have you ever tried to pick up 15 gallons?
