I enjoy my mead chilled but it depends on the recipe.
As for carbonation, you can do this with mead. Sparkling mead is another variation; but, you must be careful. Similarly to bottling brewed beer, you can end up with bottle bombs if you do not exhibit caution. You can read up more about carbonating mead
