Default Are there any recipes for Viking Blod or Klapojster Mjod?

Every other mead I've had has been cloyingly sweet but these two were great. The only problem is I can't get them anywhere around here. Does anyone have a clone recipe or a good metheglin recipe for that matter? Ive heard Jadwiga is good as well but never tried it. I would like to make a non cloying mead.

I also find that if you don't treat your yeast right, you can easily end up with a stuck fermentation before the yeast actually hits its full attenuation.

degassing primary, and staggered nutrient additions do wonders for yeast health, but as stated you also need to use the right ratio of honey and a yeast that can 'get you there'.
