This question made me join the forum.
Racking mead is critical to good flavor.
Your primary fermentation should go as fast as possible, so you can get enough alcohol in the mead quickly, and then get the mead off of the dead yeast cells, which can add unwanted flavors to your mead.

For non fruit meads I do this between 21-28 days.
For Melomel mead I pitch the wort onto frozen fruit in a bucket with plenty of head space. Six or Seven days later I rack it to a glass carboy. I usually use 2 pounds of frozen fruit per gallon of finished mead. Then rack this again after another 21-28 days.

I always rack a 2nd time. Normally 3-4 months after the 1st racking, or when there is noticeable amounts of dead yeast cells in the bottom of the carboy.

Once it has cleared, I bottle it. If it does not clear after 8-10 months, I add Irish moss, wait a few days, then rack it again.

you might want to try "joe's ancient orange" recipe. it's an easy one to make, uses storebought bread yeast, and is ready to drink in 3 or 4 months. gives you something to drink while waiting for the traditional mead ages.
it's won two competitions for me so far.

Thank you for all the help everyone. I am on my way. I just bought 5 - 1 gallon jugs to do smaller batches but more of them so I can find out what I like and experiment.

small batches are good for experimenting, like if you are preparing a 5 gallon batch and want to try different ingredients or amounts in separate ones, but i always make 5 gallon batches. the first 3 or 4 are for testing to see if it's aged enough. i would hate to realize how good a batch is on the last bottle!

I just got my first one started, just a plane ol' Clover Mead, I had a 4lb honey jar and was just guessing trying to use 3 lbs. Well I over shot as I had a OG of 1.133 with what looks like over a Gallon but at any rate it is off.

I rehydrated with the go ferm and this morning after it started, I added some fermaid K and it looks happy.

I also have about 3 lbs of orange honey and blueberry honey which I plan on adding the same fruit to while fermenting.

nice! I'm sitting on 15lbs of cherries, waiting to get a good deal on some good honey before I start my next 3 gallon batch.

I transferred a orange honey mead that I did about 2 months ago and took a gravity reading. Holy crap. it was at 1.000, down from 1.123 or about 16.2% ABV. The stuff tasted like rocket fuel, not that I have had any or anything though. Just thought I would share but man this stuff is going to need some aging.
