Thaw them to room temperature before racking onto them.
Regarding the amount per gallon, I'm sure you'll get several suggestions all of which are based on one's personal taste. In my case, it's 2-3 lbs/ gal. for blueberries, and ~1/2 lb/gal. for cranberries.
The amount of fruit can vary based on the base mead recipe - OG, honey variety, yeast type, and SG at racking. Knowing this information can be helpful (hint...).
