My blackberry melomel has got to be the strangest ferment I've ever had! Even though I had a huge starter with two high gravity yeasts, it took a week to get going. Four weeks later, the bubble rate is still slowly increasing (it's all of 12 per minute). SG is down to 1.048, about half way.
I've never fermented the juice first, then added the honey & I have no idea where it will finish, but it will certainly taste good.
